Amara Singapore: Award Winning Honey Roasted Challand Duck by Chef Jason Tang

SINGAPORE, 27 August 2018 – Amara Singapore presents the lauded Honey Roasted Challand Duck on ala carte dinner menu at Element on Tras Street from 15 October 2018.

Imported from France, this lean duck is roasted to perfection for a tender, juicy bite. The duck skin is lightly glazed with honey and seasoned with coriander, cumin seeds and exotic spices, making this Challand duck dish the perfect combination of sweet and savoury on a plate.

At the Food and Hotel Asia 2018 Culinary Challenge, a biennial competition where hundreds of culinary talents from around the world showcase their finest skills, Chef Jason crafted his award-winning dish with the incorporation of his Chinese background with his modern European-style culinary methods by using Chinese parsley to elevate the flavours of the French produce. Honey is brushed onto the duck skin to replicate the light sweetness commonly present in Chinese dishes. On top of it all, the duck is slightly smoked atop dry hay for a refreshing and earthy aroma, leaving guests craving for more. A refined masterpiece is apparent from the intricate cooking methods to the presentation of colours and textures showcased by Chef Jason.

The dish is priced at SGD 44* and will be made available from 15 October 2018 onwards at Element on Tras Street at Amara Singapore and is subject to Chef Jason’s availability.

About Chef Jason Tang

Having built up a solid portfolio of international culinary experiences in Michelin-starred restaurants, Sous Chef of Amara Singapore, Jason Tang, is no doubt an up-and-coming respectable culinary figure to pay attention to. The 28-year-old who hails from Kuching, Malaysia, first step foot in the culinary world at the age of 13 when he began helping out at his parents’ chicken rice stall. It was then when he discovered his passion for food.

After graduating from the Singapore Hotel and Tourism Education Centre (SHATEC) with a specialisation in Modern European and French cuisine, Jason officially began his career at Shangri-la Hotel, under the helm of Charles Goh, current Executive Chef of Amara Singapore. Jason has had the privilege to work at various Michelin-starred restaurants such as Saint Pierre at One Fullerton Hotel and JAAN at Swissôtel, where he took on the role of a Chef de Partie. Fuelled by his passion and love for cooking, Jason flew to New York in 2016 to partake in an unpaid culinary exchange at  renowned 3 Michelin-starred restaurant, Eleven Madison Park, where he had his culinary skills honed.

In 2018, Jason participated in Food & Hotel Asia (FHA), Asia’s most prestigious international culinary competition, clinching a bronze award for his Juicy Honey Roasted Challand Duck dish in the Field and Forest category.
