Making it easier for guests to dine without the pressure of having to choose from the à la carte menu, the chefs have carefully crafted coursed menus to present a dining experience full of flavour. To offer the best seasonal ingredients and produce, the menus will be changed monthly to tantalise the taste buds with new original creations.
In Square One, the Parma Ham with Crispy Pork Rillette, Cornichon and Truffle Mayonnaise make a delightful start to the meal. Diners can then pick their main course from a variety of specialties, from Grilled Sirloin with Parsnip Purée, Spinach, Fondant Potato to a Shiraz Jus, to Crispy Skinned Barramundi Fillet with a Bisque Sauce, Lobster Tortellini and Green Asparagus. Conclude with a sweet ending to this gastronomic experience with a Banana Crème Brûlée, Chocolate Madeleine and Peanut Praline Ice Cream or a Coconut Tapioca with Mango and Coconut Sorbet.
Those in the mood for Italian can opt for Opera where they can start their journey with a Crispy Semolina Crusted Calamari and Panzanella Bread Salad, or perhaps the “Toretellini Alla Brodo” Meat Pasta with a Veal Consommé and Shaved Parmesan. For the main, savour a quintessential Tuscan classic with the “Fish Cacciucco” Fish Stew with Sausage and Vegetable Cous Cous or try the Marsala Grilled Chicken Breast with Peppers, Spinach and Italian Roasted Potatoes. Finally, the journey through Italy ends with a choice of two light but decadent confections. Select the Cappuccino Panna Cotta, served with a Dark Crispy Chocolate, Baileys Doughnut, or choose the Yoghurt Sorbet with a Chilled Marsala Raspberry Soup and Fried Basil. These luscious desserts will leave guests completely satisfied.
