SQUARE ONE UNVEILS NEW DISHES
The arrival of Soren Lascelles marks the beginning of a whole new culinary journey at Park Hyatt Saigon’s signature restaurant, Square One. Maintaining the identity and integrity as a Vietnamese Seafood and Western Grill restaurant, Soren incorporates his own flair with new dishes on the menu, alongside Square One’s signature items.
New starters on the menu include Pan Fried Foie Gras with Fig, Hazelnut and Fruit Loaf; Fresh Goats Curd Beetroot Salad with Pine Nut Praline and Basil; and Scallops with a Vietnamese Spiced Sauce, Leek and Asparagus.
The selection of new main dishes features delights such as Rack of Lamb with Salsa Verde, Parsnip, Bacon and Braised Shallots; Roast Half Margaret Duck with Cous Cous, Glazed Da Lat Carrots and Orange; and Whole Roast Poussin with a Bread Sauce and Petits Pois à la Française.
